Aged Camembert: has a rich and buttery and nutty palette. The rind is bloomy white caused by a white fungus, called penicillium candidum. The rind is meant to be eaten with the cheese. Compares the young Camembert which gives a milky and sweet taste, the aged one has a more salty flavor, and pairs well with Chablis, apple cider and Beaujolais jammy red wine.
Alternative way to enjoy is place the whole piece of camembert with a piece of thyme, bake in oven at 160°C for 5 to 8 minutes, and melt like fondue.
